The Double-Seal Fail-Safe
When dealing with moist ingredients, marinades, or high-fat meats, a tiny droplet of liquid or grease will often get sucked onto the sealing line. On a standard consumer machine, this moisture creates a cold spot during the heat cycle, resulting in a compromised weld that fails under thermal stress.
The Nesco Deluxe VS-12 and the 95kPa Precision Sealer solve this structural vulnerability by implementing parallel Double Heat Seal arrays. They execute two melted lines across the bag simultaneously. If grease compromises the first line, the secondary backup line catches the vacuum, helping preserve your proteins for long-term storage or high-temperature water baths. A properly sealed double-line weld reduces air exposure and freezer burn effectively, but vacuum sealing is not a food safety method on its own. Removing oxygen can actually favor the growth of Clostridium botulinum, the bacteria responsible for botulism, in foods stored at unsafe temperatures. Vacuum-sealed food still needs to be refrigerated, frozen, or properly processed (e.g. pressure-canned) according to USDA/FDA guidance — never stored at room temperature just because it’s sealed.
How to Read Vacuum Sealer Specs
- Vacuum level: Quoted in kPa or bar (-0.95 bar is about 95 kPa of vacuum). A stronger vacuum removes more air, but it also crushes delicate foods such as bread, berries or fish fillets. A pulse or manual mode lets you stop before that happens.
- Moist-food modes: These lengthen the heating time or stop the pump earlier, so liquid doesn’t reach the seal bar and weaken the seal.
- Seal width and double seals: A wider seal, or two parallel seals, is more forgiving of small amounts of grease or moisture.
- Duty cycle: The number of consecutive seals before the machine needs to cool down. It matters if you portion large batches at once.
- Bags: Edge sealers need embossed or textured bags so air can escape. Handheld units use special valve bags. Built-in roll storage and cutters make custom bag sizes easier.

Sealing Tips
Freeze very juicy foods or liquids until firm before sealing, leave a few centimeters of empty bag above the food, and wipe the inside of the bag opening clean before sealing. Label bags with the contents and date.
